Cocoa grue are the main products obtained from the transformation of cocoa beans. In particular, the grue represent the most precious and tender part, as they are obtained from the first phase of processing the beans without further refining steps. Once cleaned, they are roasted with a toaster that eliminates moisture and bacteria and then moves on to crushing, in which the skin is detached from the bean which is roughly crushed, giving life to the cocoa nibs. The crushed product is sieved according to the size to be obtained by sucking up the remaining impurities. The cranes that pass the sieves are then further ground.
Grue are used in some types of beers, in particular Stout and Porter. Usually they are added in the last 10 minutes of boiling, but they can also be added in mashing or dryhopping.
